Yaxell is Japanese brand based in the city of Seki. It has more than 30 year of experience in the industry, and it uses the traditional know-how of the manufacturing of Japanese katanas to make kitchen knives with remarkably sharp blades. The great quality of Yaxell knives has led the brand to be nowadays well known all around the world.

The RAN series is probably Yaxell's most popular range of kitchen knives. These knives are designed to let you feel comfortable and at ease with every cut that you make in your kitchen, and the Yaxell RAN Chef knife in this page is not the exception. This polyvalent knife can easily be the most important kitchen tool as you can use it to cut almost everything: fruits, vegetables, meats...

To be able to make precise cuts on all your foods, this chef knife is equipped with a blade that has a VG10 steel core, which is a high-quality steel used in most high-end kitchen knives. The composition of this steel (1% of carbon , 15% of chromium, 1% of molybdenum, 0.2% of vanadium, and 1.5% of cobalt) allows the blade to be very hard, and thus it remains sharp for long time. Its hardness level reaches 61 HRC in the Rockwell scale.

Around the core, there are 69 layers of alternating soft and hard steel posed on top each other creating what is known as the damascus effect. This goldsmith technique is used to give the blade the right combination between solidity and flexibility. In addition, the different steel layers create patterns on the blade's surface that enhance the look of the knife.

The handle is another important part of this knife. It is made of canvas micarta, which is a material composed of 40% resin and 60% of canvas (linen). This material is highly durable and can resist temperatures going up to 150°C. It is also resistant against humidity, and it has been approved by the Food and Drug Administration of USA to be used in professional kitchens.

Furthermore, the handle has 2 stainless steel rivets that put together all the parts of the handle thus creating a truly solid piece. The rivets are connected to the full tang that goes all the way to the end of the handle. The robust tang is made of 18/10 stainless steel, thus it is resitant to corrosion.

To take good care of such special knife, you have to wash it delicately by hand and dry it immediately to presever the knife's great look. Given that the VG10 steel core has a high carbon content, the blade might not be so resistant to corrosion, thus it is very important to prevent it from remaining humid.
