The Tamahagane Bamboo Kyoto Paring Knife is a tool that every cook needs to have in his or her kitchen. Despite its small size, it is very versatile knife as it can be used for cutting all types of fruits and vegetables in an easy and precise way. With a length of only 9 centimeters, the blade of this knife is truly special. It has a VG5 steel core with 0.7% - 0.8% of carbon content, which enables the blade to reach a high hardness level of 61 HRC in the Rockwell scale. Thanks to this high level of hardness, the blade can keep a razor sharp edge for a long time. 

When compared to the renowned VG10 steel, which is used in a great number of other Japanese knives, the VG5 steel stands out for having better resistance to corrosion. Although the VG10 steel is slightly harder thanks to its higher content of carbon (around 1%), the VG5 steel is still highly robust and rigid.

Tamahagane Bamboo Kyoto

The core of the blade is covered with 63 layers of SUS410 steel, which is what gives the blade the original and beautiful damascus look. The combination of soft and hard steel layers not only improves the look of the blade but it also gives the blade the perfect balance between rigidity and flexibility.

Moreover, the handle of this knife is made of stainless steel. The advantage of having a handle of this material is that it does not absorb bacteria and has good resistance to corrosion. Nonetheless, the things that will impress you the most about this handle is its dazzling design which ressembles the stem of a bamboo tree.

To preserve the quality and beauty of such special knife, you need to give it proper maintenance and care. We recommend you to only wash it by hand. You simply need to wash it with a sponge, and once you're done, make sure to dry it and store it in a safe place.
