Jikko knives have a great reputation among professional Japanese cooks, because they cut extraordinarily well and every detail in their design makes them true pieces of art. In a market that being flooded by hundreds of Japanese style knives, Jikko remains one of the few brands who keep offering knives truly handmade in Japan by experienced craftsmen. 

The Tokusei series is one of the Jikko's knife ranges that offers that best price/quality ratio. A good example is the mioroshi deba knife that we offer you in this page. This traditional type of Japanese kitchen knife is perfect for cutting fish in almost every way. It is so polyvalent that it can accomplish the same functions of a Deba knife and of a sashimi knife. The thick blade is perfect for behading fish, whilst the beveled edge is ideal for cutting thin fillets.

With a length of 21 centimeters, the blade has Nihon steel core. This high quality type of Japanese steel has a high carbon content that makes the blade strong and rigid, reaching a hardness level of 59/60 HRC in the Rockwell scale. Furthermore, the core is surrounded by a layer of soft iron, which is visible on the blade's surface due the difference in colour between the steels.

As it is the case for every knife from the Jikko Tokusei series, the blade was sharpened by hand by an artisan with a lifetime experience in the sharpening of blades. The sharpening process involves the use of different sharpening stones of different grains. The artisan starts by using a thick, coarse grain, and finishes by using a stone with fine grains 3000. The smooth transition from coarse to fine grains allows the blade to have an excellent sharp finish.

To enhance the astonishing look of the knife, the blade's surface has an engraving of the logo in Japanese made by an artisan. The engraving is directly made by hand using a punch and a small hammer, and because it is truly engraved in the steel and not just stamped, the logo will never fade away. A very nice touch of originality admired by several cooks!

Moreover, the handle is made of Magnolia wood, which is hard and naturally antibacterial. The surface has been polished so that you can enjoy a soft, pleasant grip. Likewise, the handle also has a engraving of the logo on its surface, which gives a unique and authentic touch to the overall knife's look. Finally, to connect the blade with the handle, the knife has a black bolster made of polycarbonate.

With a knife as special as this one, you need to take good care of your knife to guarantee the durability of its look and cutting performance. Because the blade is made of carbon steel, it should always be washed by hand using non-agressive products and dry it immediately with a soft cloth.
