This Japanese sharpening stone from the renowned brand KAI is a great accessory for sharpening Japanese kitchen knives as well as some Western knives. The surface of this stone is composed of individual fine grains (grit 800) that are ideal for sharpening kitchen knives with not highly rigid steel blades. In simple terms, this stone is ideal for standard knives! It is not meant to be used with blunt knives because the grit is too fine, but it is neither suposed to be used with high end Japanese knives because the grit is too coarse for them.
