This sharpening stone from the renowned Japanese brand KAI is perfect for honing the blades of your Japanese kitchen knives. Its double sided design you allows you to have a more complete sharpening process. Both of the grains in this whetstone are quite fine, so this whetstone is recommended for ultra rigid blades and is not to be used with blunt blades.
Here's a brief description of each grit:
- Grit #3000 (yellow side): these fine grains can have two different roles. On one hand, this grit can be used to make the initial honing of a blade made of an ultra hard steel that is capable of remaining sharp for long time. The honing of the blade could then be finished using the other side of this stone. On the other hand, this grit could also be used for doing the final touches on a less rigid blade (around 60 HRC) that has been previously honed with a coarsed grit.
- Grit #6000 (white side): this is side is recommended for polishing the edge and give it a final razor sharp finish. Because the grains are so fine, they refine the edge of the blad thus making it so sharp that you will be able to cut your food almost effortlessly. This grit is to be used with blades above that are above 60 HRC in the Rockwell hardness scale.
To gurantee a safe usage, this sharpening stone comes with a black plastic the stand that is perfect for safely posing the whetstone in it while your sharpen your knives. Moreover, the stand can work as a water reservoir, which helps your stone to remain wet during the sharpening process.
With a size of 18.5 x 6 x 3 centimeters, this whetstone will be easy to carry around in your roll bag or to store in any drawer of your kitchen. However, be careful avoiding any possible strokes against the stone as this one can get broken. Finally, to complement this stone and make its usage much simpler, we recommend you to also buy a sharpening angle guide and a flattening stone.
To use this or any other whetstone, you firs need to to soak it in water for about 5 to 10 minutes. Then, while sharpening the knife, make sure that the whetstone always remains slightly wet. Usually, to sharpen a knife in a whetstone, the blade needs to be at an angle of around 15° in relation to the stone's surface. Because maintaining always the same angle is not easy, it is recommended that each knife is always sharpened by the same person.
