This Kanetsugu Pro-J carving knife is a must-have for cooks who often work with meats and fish. Indeed, this type of knife is excellent for slicing through the flesh of meat and fish in a precise and clean way. Thanks to its size, you can easily use to cut big pieces of meat without any trouble.

A sharp blade with a beautiful look

It is made of 3 layers of steel lying on top of each other. The core is made of ZA-18 steel enriched with cobalt, which is an element that increases the hardness of the steel. The top layer is made of AUS-2 steel, which is folded into two layers around the core. This type of blade construction is known as San Mai steel structure.

With a hardness level of 60/61 HRC in the Rockwell scale, this blade can remain sharp longer than standard blades. Furthermore, this high level of hardness also enables the blade to have a remarkable cutting performance as it penetrates the foods easily and precisely.

For the aesthetics, this blade has a hammered finish on its surface, which is known as Tsuchime. However, the "dimples" on the surface are not only there for decoration, because they also reduce the stickiness of the blade as they create tiny air bubbles between the blade and the food, thus reducing the possibility of the food remaining sticked to the blade.

Elegant and comfortable handle

Made of reinforced black laminated wood, this knife's handle is both robust and durable. It is fixed with 2 steel rivets, and it is connected to the blade with a stainless steel bolster. The handle's design enables you to hold the knife comfortably at all times, and its colour creates a beautiful contrast with the steel of the blade.

How to take care of your knife
