The Kanetsugu Pro-J utility knife is perfect for your daily cuts of fruits and vegetables. Its sharp blade has a San Mai steel structure, which means that it is made of 3 steel layers lying on top of each other. The core is made of ZA-18 steel enriched with cobalt, which is an element that increases the steel hardness. Around that core, there is a layer of AUS-2 steel that is folded in two to well protect the hard core.
With a hardness level of 60/61 HRC in the Rockwell scale, this blade is able to remain sharp for a long period of time before needing to be honed again. This high level of hardness is also advantageous for the cutting performance of the knife as the blade penetrates your food ingredients with a remarkable ease and precision.
To top it off, the surface of the blade has an original hammered finish known as Tsuchime. The "dimples" on the blade's surface do not only give your knife an authentic look but also make the blade less sticky as they create micro air pockets between the blade and food whilst making your cuts.
As for the handle, this part is made of reinforced laminated wood, which is material that is both robust and durable. The handle also has 2 steel rivets that guarantee solidity. Moreover, the stainless steel bolster connecting the blade with the handle ensures an optimal balance.
