Based in the Japanese city of Seki, Kanetsugu is a brand with a long history in the cutlery industry. Indeed, for more than a century, this manufacturer has been putting in practice its remarkable expertise to manufacture top quality kitchen knives that honour the prestige of Japanese cutlery.

The Kanetsugu utlity knife 12cm in this page is a versatile kitchen knife of hiigh quality that you can use for the daily preparation of your meals. With this polyvalent knife, you can cut all your fruits and vegetables, as well as boneless meats. Thanks to its medium size blade, this knife is more handy than a chef knife, which is often used for similar cutting tasks.

Beautiful blade

This knife has a gorgeous damascus blade that is made of several soft steel layers folded around a core made of an ultra hard steel. This type of construction enables the blade to be both rigid and flexible at the same time, and thus it can have an ultra sharp edge without being too fragile.

Its core is made of VG10 Japanese steel, which is a famous alloy that has 1% of carbon content. The blade is very rigid, and this explains why its edge is able to remain sharp for longer time than standard blades. Another advantage of the blade's rigidity is that you can hone it in a deeper way so that you can obtain a truly razor sharp result.

Around the core, there are 32 steel layers that are visible as wavy lines on the blade's surface. We can say that the blade is made of a total of 65 steel layers (32 layers folded around each side of the blade + the core). Despite of this, you can see the mention of "33 layers" on the blade, but this is because it counts the 33 layers that are visible on each side of the blade. 

To make the blade harder and thus enhance its long-lasting sharpness, the blade received a special treatment known as the Sub-Zero treatment. This treatement consists in heating up the steel to then put it immediately at a temperature of -70C°. The drastic change of temperature is what causes the steel harden up.

Elegant handle

Made of micarta, this knife's handle is both elegant and durable. Micarta is a composite material that is composed of 40% resin and 60% linen.  This material allows the handle to be resistant to humidity and changes in temperature, which in turn makes this knife perfect for kitchen environments.

In addition, the handle also has 2 rivets that are fixed to the knife's full tang. The bolster is directly integrated into the blade to prevent any liquid or food from getting trapped in between both parts of the knife. A red line between the black micarta and the steel bolster adds a touch of cachet to the knife's look.

This utility knife belongs to the Kanetsugu Saiun series. All the Japanese knives from this collection are designed for a domestic use. Not only they are beautiful but they are also durable and highly effective. The quality of their cutting performance as well as their elegant look are enough to convince even the most demanding chef!

For this and all the Kanetsugu Saiun knives, it is recommended to avoid putting them in the dishwasher. To preserve their look as well as their excellent quality, we recommend you to wash them by hand using lukewarm water. Then, dry them with a soft cloth and store them in a dry place.
