More info

The Kanetsugu Saiun paring knife 9cm is indispensable when working with small fruits and vegetables. This handy kitchen knife is very easy to use thanks to its small size. It is perfect for replacing the chef knife for all those small cuts that require great precision and for which the blade of a chef knife is more difficult to handle due to its bigger size.

It is equipped with a gorgeous blade that is made of several damascus steel layers folded around an ultra rigid steel core. This type of construction enables the blade to be both rigid and flexible at the same time, and thus it les fragile than most knives with ultra rigid blades.

The core is made of VG10 steel. This renowned Japanese steel alloy has 1% of carbon content, which is what makes the blade so hard and rigid (60/61 HRC). Such high level of hardness allows the the blade's edge to remain sharp for long periods of time before needing to hone it again.

Around the core, there are 32 layers of softer steel that are visible as wavy lines on the blade's surface. In total, we can say that the blade is made of 65 steel layers, because there is the core plus the 32 layers folded around each side of the core. The mention of "33 layers" is visible on the blade, but this is because it counts the 33 layers that are visible on each side of the blade.

To make the blade harder and enhance its long-lasting sharpness, the blade receives the Sub-Zero treatment. This special treatement consists in heating up the steel and then putting it immediately at a temperature of -70C°. The drastic change of temperature is what causes the steel harden up.

Made of micarta, this knife's handle is both elegant and durable. Micarta is a composite material that is composed of 40% resin and 60% linen. This material allows the handle to be resistant to humidity and changes in temperature, which are highly valuable characteristics for tools used in the kitchen.

The handle also has 2 rivets that are fixed to the knife's full tang. With the bolster being directly integrated into the blade, there is no space between the blade and the handle for any liquid or food to get trapped in between both parts. Finally, the red line between the black micarta and the steel bolster adds a touch of cachet to the elegant look of the handle.

Maintenance: To preserve the quality and stunning look of this knife, we recommend you to wash them it hand using lukewarm water. Then, dry it with a soft cloth and store it in a place completely free of humidity.
