This Tamahagane Kyoto Sujihiki knife, better known as a slicing knife in the Western world, is a high-end kitchen tool that is perfect for slicing your pieces of meat in a precise and easy way. Thanks to is long blade, it is ideal for slicing even the biggest pieces of meat. 

Its blade has a core made of VG5 steel, which is similar to the famous Japanese VG10 steel, but thanks to a lower content of cobalt, it resists better to corrosion whilst still remaining solid and hard. It has a carbon content of 0.7 to 0.8% that allows the blade to reach a high level of hardness of 61 HRC in the Rockwell scale.

One of the most remarkable characteristics of this damascus blade are the 63 layers of SUS410 steel around the core. The accumulation of those steel layers creates wavy lines on the blade's surface that give a truly original and gorgeous look to the knife. Furthermore, they guarantee an optimal balance between rigidity and flexibility.

The handle is made of micarta, which is a durable material characterised for its anti-bacterial properties. It is resistant to water and changes in temperature, and the veinings on the surface are a perfect match for the beautiful look of the damascus blade. In addition, the handle's comfortable design lets you hold the knife with ease whilst slicing your meats.

How to take care of this knife: Do not wash in the dishwasher. Hand wash only. After washing, always dry it immediately with a soft cloth. To hone or sharpen the edge (whenever is needed), we recommend to use a whetstone with a fine grit.
