More info

There is nothing better for a cook to have a knife with exceptional cutting performance and a great quality that enables the easy preparation of delicious dishes. In fact, that is exactly why Jikko Japanese knives are highly appreciated by Japanese professional cooks. Great part of Jikko knives' outstanding quality is explained by the fact that since the foundation of the brand in 1901, Jikko knives are still being entirely handmade by experienced artisans in Sakai, Japan.

All the great qualities of Jikko can be found in each of the brand's knife ranges including, of course, the Mahogany Tsuchime series to which this chef knife belongs. The Jikko Mahogany Tsuchime knives are incredibly beautiful, and they are available at very attractive prices taking into consideration their high quality.

This Japanese chef knife is a truly polyvalent knife that any cook would love to have in his or her kitchen. It is so versatile that you can literally use it for almost evey type of food: meats, fish, fruits, vegetables, herbs... It is simply a multi-purpose tool of high quality that can be of great use in your daily cooking routine.

A good knife requires a good blade, and this chef knife has an extraordinary one! It is forged, which means that it was built from a single piece of massive steel shaped into the shape of a knife. This is why the blade is so solid and has a remarkable balance. In its core, it is made of VG10 steel, which is a high quality steel known for its great solidity. Around the core, there are 33 layers of damascus steel that complete the body of the blade.

The layers of damascus steel give the blade an original look with wavy lines running accross the surface. However, the aesthetics is not the only advantage of having several layers of damascus steel. In fact, the overlapping layers of soft and hard steel provide the blade the perfect combination between rigidity and flexibility.

What really makes the blades of all the knives of the Mahogany Tsuchime series so special is their hammered surface. Indeed, the surface of the superior side of each blade is hammered with a press, which results in a "hollowed" surface that gives an original look to the blade. Moreover, the hammered surface also helps to perform cleaner cuts as it reduces the amount of food getting sticked to the blade.

Just when you thought that the blade couldn't be any better, let us also tell you that the blade of this knife was sharpened by hand by a true Japanese artisan. The process starts with the use sharpening stones with coarse grain, and it finishes with the use of a stone with fine grit 3000. The careful transition from coarse to fine sharpening gives the edge a smooth, sharp finish.

The handle, which also plays an important role in the look of the knife, is made of mahogany wood. It is lightweight, which allows you to have a comfortable grip ideal for daily use. It is also very solid thanks to its 3 steel rivets that hold the structure securely. Finally, it is connected to the blade through a steel mitre that ensures a perfect jonction between both parts.

It is just that simple: choosing a Jikko Mahogany Tsuchime knife is choosing a high end knife that aims for perfection in the kitchen. For that reason, we invite you to see all the other knives from this Japanese knife range available here at MyChefKnives!
