For the professional and hobby cooks who often work with meat, there is no better feeling than using a truly sharp knife that slices the meat with great precision and ease. That is indeed what makes this Jikko Carving Knife so special! This knife is great for cutting roasts, hams, and big pieces of meat, and with its dazzling look, there is a great chance that this can become your new favourite kitchen knife ;)
This knife is part of the Mahogany Tsuchime series, which is one of the most refined knife ranges made by the Japanese brand Jikko. Indeed, all the Jikko Mahogany Tsuchime knives have a beautiful design, and taking into consideration their great quality, you will be positively surprised with their prices.
Without any doubt, the best feature of this knife is its extradordinary forged blade, which was built from a single piece of massive steel shaped into the shape of a knife. It has VG10 steel core, which is why the blade is so solid and robust. Around the core, there are 33 layers of damascus steel that complete the body of the blade.
The layers of damascus steel give the blade an original look with wavy lines running accross the surface. It is thanks to this original look that knives with damascus blades are considered to be among the most beautiful types of knives. Moreover, the overlapping layers of soft and hard steel provide the blade the perfect combination between rigidity and flexibility.
Another original feature is the blade's hammered finish. Indeed, the surface of the superior side of each blade is hammered with a press, which results in a "hollowed" surface that gives an original look to the blade. The hammered surface also helps to perform cleaner cuts as it reduces the amount of food getting sticked to the blade just as it happens with Granton edge blades.
It is also important to point out that the blade of this knife was sharpened by hand by a true Japanese artisan. The sharpening process starts with grindstones with coarse grain, and it finishes with the use of a stone with fine grit 3000. The smooth transition from coarse to fine grains enables the edge to have a truly sharp finish.
Finally, the handle is made of mahogany wood (yes, that explains the name of the knife series). It is lightweight, which allows you to have a comfortable grip ideal for daily use. It is also very solid thanks to its 3 steel rivets that hold the structure securely. Finally, it is connected to the blade through a steel mitre that ensures a perfect jonction between both parts.
The beauty and remarkable quality of this knife is a clear proof of why Jikko knives are highly appreciated by Japanese professional cooks. These high end Japanese knives are entirely handcrafted in Sakai, Japan by true artisans. Their great cutting performance and fine look are tuly worthy of admiration.
