More info

The Shizu Hamono Yamato Yanagiba Knife is a must-have for cooks who love preparing sushi and sashimi. This Janese type of kitchen knife is ideal for making precise slices of fish and meat. Suitable for both right and left handed cooks, this knife is perfect for anyone who is passionate about Japanese cuisine.

It belongs to the Yamato knife series from the Japanese brand Shuzi Hamono. All the knives from Shuzi Hamono are made in Seki, Japan. They are the result of the perfect combination between the Japanese know-how and modern technology, which is why these knives meet the highest standards of quality.

The blade of this yanagiba knife has a San Mai structure, which means that it is made of 3 different steel layers. This type of blade structure is similar to that of a damascus blade but with a lower number of steel layers. The different steel layers are visible in the wavy line that is close to the blade's edge.

At the core of the blade, there is AUS8 steel with 0.8% of carbon and 14.5% of chromium. The carbon enables the blade to have a high level of rigidity (59 HRC in the Rockwell scale), whereas the chromium is what enhances the blade's resistance to oxydation. The combination of both elements makes the blade that easy to maintain and gives it a great cutting performance.

The top layer of the blade is made of SUS1A-1 steel, which enhances even more the corrosion resistance of the blade. In addition, the blade's hammered surface gives the knife an original and authentic look. Each hammered surface is different, thus each single knife is guaranteed to be truly unique.

Matching perfectly with the look of the blade, the handle of this knife is made of dark laminated wood with veinings that are unique to each knife. It has an oval, ambidextrous design with a polished surface that gives you a smooth feeling when in your hand. Thanks to the light weight of the knife, you can hold it for long time without causing too much fatigue to your wrist.

Finally, this yanagiba knife is sold in a beautiful, wooden box. The Shizu Hamono logo has been engraved on the top of the box to give it more cachet. A box like this one makes the knife the perfect gift for anyone passionate about cooking and authentic Japanese cutlery.
