Great all round knife |
| - -. on 18/04/2020 | This Santoku is a quality knife all round. It holds its edge very well, is lightweight, very well balanced for a pinch grip and makes quick work of most kitchen tasks. For the price, it's very close to a 10/10 like the Nakiri in the same series from Tojiro. However, I find the functional space on the blade to be a little short. With larger foods I often find I have to use the blade right up to the handle, which can be a bit claustraphobic when using this knife in a pinch grip (as I believe it is intended to be used given its forward weight distribution). The knife would stand to benefit from even just one extra cm of blade. The butt of the knife, like all of the knives in the DP series, could do with a slight softening so that it isn't a sharp-ish, raw edge of steel. However this is a very small gripe and doesn't detract from the comfort at all during 1-2 hour spells of food prep and cooking. This is a great knife all round and well worth its price - I'd give it a 9/10 if I could. Anyone used to larger knives, or people with particularly big hands, may want to look at longer santokus though. I also believe that everyone who already has a knife which is very capable at handling meat should buy the Tojiro DP Nakiri instead, as this has a flatter profile better designed for push-chopping veg. Nonetheless this is a great santoku that will comfortably last many, many years and not dissapoint throughout. I have had mine for nearly a year and a half now and it has maintained its edge very well with minimal sharpening. |
