Surprisingly brilliant knife |
Etien J. on 18/04/2020 | After really enjoying the Tojiro DP Santoku I thought I'd buy something with a longer straight edge on it that is just as nimble and light. This knife has really, really impressed me and is a real workhorse that I use almost every day. Not only is this knife often cheaper than the Santoku (hitting £75 on other sites), but in my opinion it is more useful. Whilst the Santoku is a good all-round Japanese knife, I find it a little short for push chopping. This knife excels through all but the largest vegetables and it comes with and holds an impressively sharp edge. I have recently bought a 45-layer Damascus steel Gyuto and when it came to prepping a whole bunch of carrots and celery, this knife was more comfortable and more effective, despite not being re-sharpened after nearly 8 months of constant use. I cannot recommend this knife enough, especially to anyone who regularly eats and processes a lot of vegetables. Light, nimble, incredibly well balanced and comfortable in a range of grips and still very sharp. To me, this is the highlight of the Tojiro DP series and I would say that this knife should be at the top of anyone's considerations for a second, more specialised knife (this struggles with processing meat, but it is a vegetable knife by design and intent so I won't hold that against it in much the same way I wouldn't criticise a paring knife for not being as effective with meats either). |
