All the knives from the Wusaki Ebony VG10 range are characterised for proving that great quality and good look can coexist in a knife. The chef knife in this page is a clear proof of that. Indeed, this knife stands out for its dazzlign design but also for its remarkable cutting performance. It is the ideal all-purpose knife that every cook needs in his or her kitchen.

The blade

With a length of 20cm, the blade of this knife is perfect for dicing, mincing, and slicing a large variety of ingredients: fruits, herbs, vegetables, and even boneless meats. Its sharpness proves to be top level since the very first cut!

Its core is made of VG10 steel, which is a Japanese steel known for its high level of hardness thanks to its 1% of carbon content. That is why this blade reaches a hardness rating of 60 HRC in the Rockwell scale, and that superior hardness is what allows the blade to remain sharp for a truly long time.

Around the core, there are 67 layers of damascus steel with a combination of hard and soft layers that give the blade an optimal balance between flexibility and hardness. Furthermore, the different steel layers create original patterns on the blade's surface, which give the knife an original look.

This blade has a V-shaped edge that wen through a final sharpening that was done by hand using a leather band whilst holding the blade at a total sharpening angle of 30° (15° on each side of the blade). The result is an ultra sharp blade that easily penetrates into your foods without tearing their internal fibres.

Moreover, the surface of the blade has been polished to give it with a mirror effect that gives the final touch of elegance to blade's look. On top of the aesthetics, the polished surface also enhances the blade's resistance to corrosion as it makes the steel less porous.

The handle

It is made of ebony ,which has been sanded to have a smooth surface that feels pleasant in your hand. The dark tone of the wood creates a beautiful contrast with the polished steel of the blade, thus giving the knife a unique look. Furthermore, the veinings present on each handle are unique, so no two knives are the same.

The handle has an octagonal shape that adapts well to all types of hands whether is the right or the left one, or whether is a big or a small one. All the handles of Wusaki knives are a bit longer than average to make the knives easier to maneuver regardless of whether you are a chef or a home cook.

Maintenance

To preserve its look and quality, you must wash this knife only by hand. You should do it with lukewarm water and mild soap whilst trying to wet the handle as least as possible, because wood is not a good friend of humidity. Then, immediately dry your knife using a soft cloth, and finally, store it in a safe place free of humidity. 

It is also important to note that the knife is sold with a blade that comes with a slightly oily surface. This is normal as the oil protects the steel of the blade. You simply need to rinse it off before using the knife of the first time.
