These knives belong to the Shun Premier Tim Mälzer series which was inspired and designed by the famous German TV chef Tim Mälzer. The blades are composed of 32 layers of stainless damask steel, also embellished with Japanese hand-hammered surface called Tsuchime, thant enhances the nonstick capacity of the blades. The core of the blades is made of VG10 steel that has been hardened to 61 degrees in the Rockwell scale. The length of the blades is 15 centimeters.

In addition to their amazing blades, these knifes have a handle made of walnut wood. This material gives them an attractive rustic look. Moreover, the handle has a symmetrical design that is perfectly suitable for both left and right-handed cooks, a rare feature within the Japanese knives series.
