More info

If you are in search of a polyvalent Japanese knife that you can use in your kitchen for your daily cuts, the Kanetsugu Pro-J utility knife might just be what you were looking for. Indeed, this versatile knife is perfect for cutting your fruits and vegetables, as well as boneless meats. On top of its impressive cutting performance, it is also quite beautiful, thus it can be a truly elegant addition to your knife collection.

The blade of this utility knife has a San Mai steel structure, which means that it is made of 3 steel layers posed on top of each other. The core is made of ZA-18 steel enriched with cobalt, which is an element that increases the steel hardness. Around the core there is a layer of AUS-2 steel that is folded in two to protect the core as if it was a sandwich.

Moreover, this blade reaches a hardness level of 60/61 HRC in the Rockwell scale. This high level of rigidity allows the blade's edge to remain sharp for a long period of time before needing to be honed again. Such level of hardness is also advantageous for the cutting performance of the knife as the blade penetrates the foods with ease and precision.

Another remarkable characteristic of the blade is the hammered finish on the surface, which is known as Tsuchime. The "dimples" on the blade's surface are not only aesthetical but also useful to make the blade less sticky as they create micro air bubbles between the blade and food whilst making your cuts.

The handle is made of reinforced laminated wood that is both robust and durable. The structure is fixed with 2 steel rivets, and it is connected to the blade through a stainless steel bolster. The curves of its design enable you to have a comfortable grip at all times, and its colour matches perfectly with the steel of the blade.

A special knife like this one can keep its high quality for truly long time if you take good care of it. To do so, it is important that you avoid letting it sit in water. You should always wash it by hand after having finished using it. Then, dry it with a soft cloth and store it a place free of all sort of humidity.

This knife is part of the Pro-J collection from the brand Kanetsugu. All the kitchen knives from the Pro-J range are made in Seki, Japan with materials of excellent quality. The Kanetsugu Pro-J knives are offered at very interesting prices that are very difficult to match if we take into consideration the quality level of these knives.
