Around the core there is a layer of AUS-2 steel that is folded in two to protect the core as if it was a sandwich.
Moreover, this blade reaches a hardness level of 60/61 HRC in the Rockwell scale. This high level of rigidity allows the blade's edge to remain sharp for a long period of time before needing to be honed again. Such level of hardness is also advantageous for the cutting performance of the knife as the blade penetrates the foods with ease and precision.
Another remarkable characteristic of the blade is the hammered finish on the surface, which is known as Tsuchime. The "dimples" on the blade's surface are not only aesthetical but also useful to make the blade less sticky as they create micro air bubbles between the blade and food whilst making your cuts.
The handle is made of reinforced laminated wood that is both robust and durable. The structure is fixed with 2 steel rivets, and it is connected to the blade through a stainless steel bolster.
