More info

The Pro-J knife range from the brand Kanetsugu offers kitchen knives of great cutting performance made with materials of high quality. All the Kanetsugu Pro-J knives are made in Seki, Japan. These Japanese knives are available at very interesting prices that are very difficult to match if we take into consideration their high level of quality.

You can discover the quality of the Kanetsugu Pro-J series with the santoku knife 17cm in this page. This all-purpose kitchen knife is ideal for cutting fruits, vegetables, meats, and herbs. It is a tool that can be very useful for the preparation of almost any type of food recipe.

Its blade has a San Mai steel structure, which means that it has 3 steel layers lying on top of each other. The ZA-18 steel core is enriched with cobalt, which is an element that enhances the hardness of the stee. Wrapping the core there is a layer of AUS-2 steel that is folded in two to protect the core as if it was a sandwich.

Furthermore, the blade reaches a hardness level of 60/61 HRC in the Rockwell scale, which is why the edge can remain sharp for a long period of time before needing to be honed againThis high level of hardness is also advantageous for the cutting performance of the knife as the blade penetrates the foods with ease and precision.

The original touch of this blade is given by its hammered finish on the surface, which is known as Tsuchime. The "dimples" on the blade's surface give the knife a beautiful look, but they also help the blade be less sticky as they create micro air bubbles between the blade and the food, thus reducing the possibility of the food remaining sticked to the blade.

Robust and durable, the handle is made of reinforced laminated wood. The structure is fixed with 2 steel rivets, and the bolster that connects the blade with the handle is made of stainless steel. Moreover, its design enables you to have a comfortable grip at all times, and its colour matches perfectly with the steel of the blade.

For taking good care of this special knife, we advise you to avoid letting it sit in water. You should always wash it by hand after having finished using it. At last, you should dry it with a soft cloth and store it a place free of all sort of humidity. Following these tips will allow you to preserve the look and quality of your knife for a long time.
