For instance, the Kanetsugu utlity knife 15cm is an all-purpose Japanese knife that stands out for its great cutting performance as well as for its dazzling look. This polyvalent knife is perfect for cutting fruits, vegetables, and boneless meats. It can be very useful for your daily cooking routine as it is not much bigger than a paring knife and not much smaller than a chef knife.
The beautiful damascus blade of this blade has several soft steel layers folded around a core made of an ultra hard steel. This type of construction enables the blade to be both rigid and flexible at the same time, and thus its edge is less fragile than that of most knives with ultra rigid blades.
Its core is made of Japanese VG10 steel, which is a famous alloy with 1% of carbon content. The high hardness of the blade (60/61 HRC) explains why its edge is able to remain sharp for longer time than standard blades. Another advantage of the blade's rigidity is that you can hone it in a deeper way so that you can obtain a truly razor sharp outcome.
The soft steel layers around the core are visible as wavy lines on the blade's surface. We can say that the blade is made of a total of 65 steel layers, because there are 32 soft steel layers folded around each side of the blade + the core itself is another layer. The mention "33 layers" that is on the blade only counts the layers that are visible on each side of the blade.
Moreover, the blade received a special treatement known as the Sub-Zero treatment. This treatment consists in heating up the steel to then put it immediately at a temperature of -70C°. The drastic change of temperature makes the blade harder and thus enhance its long-lasting sharpness.
The handle is both elegant and durable. It is made of micarta is a composite material that is composed of 40% resin and 60% linen. This material allows the handle to be resistant to humidity and changes in temperature, which in turn makes this knife perfect for kitchen environments.
In addition, there are 2 rivets that are fixed to the full tang running inside the handle. The bolster is directly integrated into the blade to prevent any liquid or food from getting trapped in between both parts of the knife. Finally, the red line between the black micarta and the steel bolster adds an original touch to the knife's look.
