More info

The Kasumi Masterpiece Santoku Knife is a clear example of Japanese cutlery has such a great reputation in the culinary world. Characterised by a remarkable cutting performance and fine design, this knife is that any cook would love to add to his or her kitchen equipment. With this santoku knife, you can cut, mince, and dice everything from fruits and vegatables to meats and fish. It is truly a super polyvalent and versatile kitchen knife.

Such a great knife is the result of the expertise and talent of Japanese master cutlers who several years of experience in the tradtional art of Japanese knife manufacturing. Indeed, this knife was made by hand Japanese craftsmen whose expertise dates back the old Samurai era when the katana was invented.

These are the 5 steps followed by the Japanese craftsment in the creation of this santoku knife:

1- The forging of the blade was done by a craftsman who is from the 25th generation of a long line of Japanese blacksmiths

2- The first manual sharpening is then carried out by a craftsman who has worked for more than 30 years as a master cutler

3- Next, the second sharpening with water is performed by one of Japan’s most renowned craftsmen

4- Damascus effect: a very detailed step done by a craftsman trained by his father, who was in turn a recognized specialist throughout Japan. He uses the technique called "halo" to create this damask. The pattern is thus finer, which allows the blade's thread to be harder, hence sharper.

5- Finally, the creation of the handle is carried out by a craftsman with more than 40 years of experience in the field, and who is specialized in the creation of Masterpiece handles.

Beyond the great expertise of the craftsmen who developed the steps described above, the great quality of the materials used also plays an important role in defining the quality of this knife. For instance, the blade has a VG10 steel core with 1% of carbon content that ensures the solidity and robustness of this knife. In addition, the other 32 layers of soft and hard steel that create the damascus effect allow the blade to be more solid.

The handle is made of micarta, which is a composite material which is very resistant to moisture and heat. It is made from fabric and resin compressed under high pressure. In addition, the handle has two rivets that make it even more solid and a steel bolster that ensures a solid joint between the blade and the handle.

This and all the other top-quality kitchen knives offered by the Kasumi Masterpiece series prove that despite the modern technology in the field of cutlery, the ancient techniques are still capable of meeting the expectations of our present days. Their quality is worthy of admiration, but to preserve these knives in the best way possible, you need to take good care of them. For example, you must only wash them by hand, you must avoid the prolonged contact with water, and you must sharpen the blades only using ultra fine grain whetstones.
