For all the true fans of Japanese cutlery, the team MyChefKnives has the pleasure to present you the Shizu Hamono knives. These authentic Japanese knives are made in the city known as Japan's cutlery capital: Seki. The Shizu Hamono kitchen knives are the living proof that traditional methods can be combined with new technology to create products of exceptional quality.
The great quality of Shizu Hamono as a knife manufacturer is well proven by the santoku knife in this page. Indeed, this polyvalent Japanese knife is perfect for passionate cooks who enjoy the Japanese cuisine. However, this versatile knife is not only for Japanese cuisine, as its versality makes its perfect to be used in a large number of scenarios. It is great for cutting most ingredients, but its particularly excellent for working with fresh vegetables.
Sharp and precise, the blade of this knife is made of 3 different steel layers. This type of blade construction is known as San Mai, and it is similar to a damascus blade but with fewer steel layers. The different steel layers are visible on the wavy line that runs next to the blade's edge.
The core is made of AUS8 steel with 14.5% of chromium and 0.8% of carbon. The chromium enhances the blade's resistance to oxydation, whereas the carbon is what allows the blade to have a high level of rigidity (59 HRC in the Rockwell scale). The outermost layer of the blade is made of SUS1A-1 steel, which is a type of steel that enables the blade to be a bit more resistance to corrosion.
Now let's talk about the handle. It is made of light laminated wood with veinings that are unique to each knife. The light colour of the handle matches beautifully with the blade's steel. The oval design of the handle makes it suitable for right and left handed cooks. In addition, the polished surface of the handle gives you a smooth feeling when in your hand.
To finish with a bang, we cannot forget to talk about this knife's packaging. This santoku knife comes in a wooden box with the Shizu Hamono logo engraved on its top surface. Forget about the traditional cardboard box in which most knives are sold, with this wooden box, this Shizu Hamono knife is the perfect gift for any passionate cook!
