In this remarkable range of knives you can find a knife for each different function. For example, this paring knife 9cm is the perfect tool for peeling and cutting small fruits and vegetables. Its blade has a VG10 steel core. This type of Japanese steel has a great reputation thanks to its durability and capacity to remain sharp for long time. Its 1% of carbon content allows the blade to reach a hardness level of 60 HRC in the Rockwell scale, thus enabling you avoid sharpen the blade so frequently.
The core is "wrapped" with 67 layers of damask steel. The damask method consists in combining different layers of steel around a core whilst alternating between hard and soft steel. This compositions gives the blade an original look by creating unique patterns on its surface, and it also helps the blade to have an optimal balance between hardness and flexibility.
Another feature that improves the look of the blade is its hammered top surface. The blade is hammered with a mechanical press and this creates patterns on the surface that are unique to each single knife. However, the aesthetics is not its only purpose. In fact, the hammered surface also enhance the blade's non-stick capacity.

Moreover, the blade's surface has been polished to get a mirror-effect that ends up adding still more cachet to its look. It is important to mention that the polished surface also plays a role in increasing the blade's resistance to corrosion. This is because the polishing flattens the surface making it less porous.
The blade has a V-shaped edge that enables a clean and precise penetration in the food. The final sharpening of the blade was made by hand using a leather band at a total angle of 30° (meaning 15° on each side). The result is undeniable: a sharp edge that would make any cook fall in love.

The handle is carved in an original shape that allows you to hold it comfortably. The thumb and the forefinger can keep good strength when using the knife, thus guaranteeing a firm grip. In addition, as it is the case in all Wusaki knives, the handle is longer than the average so that they can be easier to manipulate. Last but not least, the bottom of the handle has the Japanese character "Tiger" engraved on it by laser, which adds yet a final touch of elegance.

I wanted short blades and solid wooden handles. These are excellent. Good blades, sharp, decently made and reasonably priced. One point of caution the wooden handles are quite chunky so if you have petit hands they may feel awkward. As a company My Chef Knives were great to deal with and delivery was absolutely on point. I’d definitely be a returning customer. |
