The blade

Made of Japanese AUS-8 stainless steel, the blade has a high content of chromium (14.5%) and molybdenum which makes it resistant to corrosion. This is a highly valuable characteristic, because it means that the knife is suitable for a usage in professional kitchens.

The steel is also enriched with tungsten and carbon (0.8%), which are two elements that increase the hardness of the blade. With a hardness level of 59 HRC in the Rockwell scale, the blade can be easily honed with a sharpening steel before every usage. Once the knife has lost its razor sharp edge, you can also sharpen it with a whetstone.

Perhaps the most original characteristic of this blade is its hammered surface. This is done by a mechanical press, and the dimples that are formed on the surface make the blade less sticky for your foods. The handle

It is made of ebony wood, which is an exotic material that is mostly used in the manufacturing of luxurious items. Care tips

Always wash the knife by hand with a sponge and a bit of mild soap. After washing it, wipe it with a soft cloth so that no humidity traces appear on the blade or the handle. Then, store it in a safe, dry place such as in a knife block or a in a chef roll bag. When you'll take the knife out of the box for the first knife, the blade will be covered with protection oil. This is completely normal, and all you need to do is to rinse it off before the first usage.
