More info

For cutting your small fruits and vegetables, you can fully trust this Wusaki Ebony AUS8 paring knife. This handy and very useful knife is an essential tool for the preparation of most of your recipes. Thanks to its small size, it is perfect for doing meticulous cuts such as the ones needed to decorate a salad.

The blade

Made of Japanese AUS-8 stainless steel, the blade of this paring knife is resistant to corrosion thanks to its high content of chromium (14.5%) and molybdenum. The resistance to corrosion is highly appreciated by cooks, because it means that the knife is suitable for a usage in professional kitchens.

The steel is also enriched with tungsten and carbon (0.8%), which are two elements that increase the hardness of the blade. With a hardness level of 59 HRC in the Rockwell scale, the blade can be easily honed with a sharpening steel before every usage. Once the knife has lost its razor sharp edge, you can bring it back using a sharpening stone.

Last but not least, another important characteristic of this blade is its hammered surface. This is done by a mechanical press, and the dimples that are formed on the surface make the blade less sticky for your foods. In addition, the hammered surface also enhances the overall look of the knife.

The handle

Made of ebony wood, the handle is truly one of a kind, In fact, this material is mostly used in the manufacturing of luxurious items. In the cutlery industry, ebony wood is reserved for high-end knives because of its natural beauty with elegant dark tones.

Its surface is varnished so that it can resist better humidity. The oval shape of the handle adapts perfectly to right and left handed cooks providing both a comfortable grip. The Japanese character "Tiger" engraved on the steel bottom of the handle gives the final touch of originality to the knife's look.

Care tips: Always wash the knife by hand with a sponge and a bit of mild soap. After washing it, wipe it with a soft cloth so that no humidity traces appear on the blade or the handle. Then, store it in a safe, dry place such as in a knife block or a in a chef roll bag.

When you'll take the knife out of the box for the first knife, the blade will be covered with protection oil. This is completely normal, and all you need to do is to rinse it off before the first usage.

This knife is part of the Wusaki Ebony AUS8 series, which offers kitchen knives that are suitable for both professional chefs and home cooks.
