They are made in the north of Canton, which is the capital city of the Guangdong province in Western China. This region is historically known for its vast expertise in the manufacturing of cutlery. The making of Wusaki knives complies with the quality standards imposed by professionals in the European industry.

The blade

It is made of AUS-8 stainless steel, which is a Japanese steel that is resistant to corrosion thanks to its high content of chromium (14.5%) and molybdenum. The resistance to corrosion is highly appreciated by cooks, because it means that the knife is suitable for a usage in professional kitchens.

The blade is also enriched with tungsten and carbon (0.8%), which are two elements that increase the hardness of the blade. With a hardness level of 59 HRC in the Rockwell scale, the blade can be easily honed with a sharpening steel before every usage. Whenever you want to recover the blade's original razor sharp edge, you can sharpen it using a whetstone.

Another important characteristic of this blade is its hammered surface. This is done by a mechanical press, and the dimples that are formed on the surface give the knife a truly original and authentic look. However, the hammered surface also helps the blade to be less sticky, so it will be easier for the food to fall off the blade whilst being cut.

The handle

Made of ebony wood, the handle is truly one of a kind, In fact, this material is mostly used in the manufacturing of luxurious items. In the cutlery industry, ebony wood is reserved for high-end knives because of its natural beauty with elegant dark tones. 

The surface of the wood is varnished so that it can resist better humidity. Thanks to its oval design, the handle provides a comfortable grip that is suitable for both left and right handed cooks. Care tips

Wash the knife by hand using a sponge and a bit of mild soap. After washing it, wipe it with a soft cloth so that no humidity traces appear on the blade or the handle. Then, store it in a safe, dry place such as in a knife block or a in a chef roll bag.

You should know that when you'll take the knife out of the box for the first knife, the blade will be covered with oil. This is completely normal as the oil protects the blade. All you need to do is to rinse the oil off before the using the knife for the first time.
