The Wusaki Ebony AUS8 bread knife is indispensable in every knife collection, regardless of whether your are a home cook or a professional chef. Thanks to its sharp, serrated blade, it is the perfect knife for cutting through the soft and hard crusts of bread.

All the knives from the Wusaki Ebony AUS8 series are made in the north of Canton, which is the capital city of the Guangdong province in Western China. This region is historically known for its vast expertise in the manufacturing of cutlery. The making of Wusaki knives complies with the quality standards imposed by professionals in the European industry. 

The blade

It is made of AUS-8 stainless steel, which is a Japanese steel that is resistant to corrosion thanks to its high content of chromium (14.5%) and molybdenum. Its resistance to corrosion is one of the main reasons why this knife is also suitable for professional use.

Enriched with tungsten and carbon (0.8%), the steel is also characterised for a level of hardness that allows the blade to remain sharp for long time. With a hardness level of 59 HRC in the Rockwell scale, the blade is hard enough to have a long-lasting sharpness and "soft" enough to be easy to hone whenever needed.

However, what is undoubtedly the most striking characteristic of this blade is its hammered surface. Indeed, the dimples on the surface, which are made by a mechanical press, give the knife a truly original and authentic look. Moreover, the hammered surface also helps the blade to be less sticky, so it will be easier for the food to fall off the blade whilst being cut.

The handle

It is made of ebony wood, which is an exotic material that is mostly used in the manufacturing of luxurious items. In the cutlery industry, ebony wood is reserved for high-end knives because of its natural beauty with elegant dark tones. 

The surface of the wood is varnished so that it can resist better humidity. Thanks to its oval design, the handle provides a comfortable grip that is suitable for both left and right handed cooks. The Japanese character "Tiger" engraved on the steel bottom of the handle is the "cherry on the cake" that shows how original and special this knife is.

Maintenance: Wash the knife by hand using a sponge and a bit of mild soap. After washing it, wipe it with a soft cloth so that no humidity traces appear on the blade or the handle. Then, store it in a safe, dry place. The blade will be covered with oil when you take it out of the box for the first time. This is completely normal as the oil protects the blade. All you need to do is to rinse the oil off before the using the knife for the first time.
