More info

Wusaki knives are manufactured in a small cutlery factory in the north of Canton in the Guangdong province in Western China. This Chinese province is known for its rich history in the making of knives. Even though production takes place in China, the manufacturing standards of the brand matches the quality standards used in Europe.

The peeling knife in this page is a handy tool of high quality that you can use for making all sorts of decorative cuts in your fruits and vegetables. As its name suggests, it can also be used for peeling. This knife is part of the Ebony VG10 knife series, and all the knives in this range are characterised for top-quality features that are described in the following paragraphs.

Short but sharp, the length of this knife has a length of only 8cm. Its shape ressembles the beak of a bird, and this shape is what makes the knife ideal for working with round fruits and vegetables. The logo of the brand is engraved by laser on the left face of the blade.

The core is made of Japanese VG10 steel, which is known for its impressive hardness thanks to its 1% of carbon content. With a high hardness rating of 60 HRC in the Rockwell scale, the blade is guaranteed to remain sharp for long time, so you won't have to hone it as frequently as you would do for a standard kitchen knife.

Ensuring an optimal balance between flexibility and hardness, the core is covered by 67 layers of hard and soft steel. A blade with this type of constructrion is what we commonly called a damascus blade. In addition, the different steel layers create original patterns on the blade's surface, which give the knife a fascinating look.

Sharpened by hand with a leather band, the V-shaped edge has a sharpening angle of 15° on each side of the blade (total of 30°). This is why the blade easily penetrates into your foods with almost no effort. As soon as the dge starts to lose a bit of its original sharpness, you can hone it using a whetstone with fine grains.

The surface of the blade has been polished, which gives it with a mirror effect that adds a final touch of elegance to the look of the knife. Beyond aesthetics, the polished surface also makes the steel less porous, and that improves the steel's resistance to corrosion.

Another feature that makes this knife so special is its handle. It is made of ebony, which is a noble wood characterised for its beauty and robustness. Its dark tone creates a beautiful contrast with the polished steel of the blade, which gives the knife a ravishing look.

Its octagonal shape makes the knife suitable for all types of hands. In addition, the handles of all Wusaki knives are a bit longer than average to make the knives easier to maneuver regardless of whether you are a professional or a hobby cook.

This Wusaki knife is sold in an elegant, black box that is ideal to offer as a gift. The foam inside of the box protects the knife during its transport. A certificate of authenticity is also included inside the box. It is undoubtedly a wonderful present for a passionate cook!

We advise you to wash this knife always by hand. Use lukewarm water and mild soap, and try to prevent to wet the handle as much as possible, because wood does not have great tolerance to humidity. Finally, dry your knife using a soft cloth, and finally, store it in a safe place free of humidity.

Finally, you should also know that the knife is sold with a blade that comes with a slightly oily surface. This is normal as the oil protects the steel of the blade. You simply need to rinse it off before using the knife for the first time.
