Blades

These knives have blades that both sharp and beautiful. The core of each blade is made of VG10 steel with 1% of carbon content, which allows the blade to reach a hardness rating of 60 HRC in the Rockwell scale. This high level of hardness enables the blade to remain sharp longer than most types of Western kitchen knives.

Each core is covered by 67 layers of damascus steel that provide the blade an optimal balance of flexibility and hardness. The different steel layers create original patterns on the surface that give the blade an original look. Making a damascus blade requires a special expertise that few cutlers have nowadays.

The V-shaped edge of each blade has a cutting angle of 15° on each side of the blade (total of 30°). The final sharpening was made manually using a grinding leather band, which is why the knives are ready to make precise cuts right out of the box.

Moreover, the polished surface of the blades creates a mirror effect that adds a final touch of elegance to the look of the knives. Beyond aesthetics, the polished surface also makes the steel less porous, which in turn enhances the steel's resistance to corrosion.

Handles

They are made of ebony, which is a noble wood characterised for its beauty and robustness. The dark tone of the wood beautifully contrasts with the polished steel of the blade. The combination of both parts result in a truly gorgeous knife. On top of that, the veinings on the surface of the wood are unique on each handle, so no two handles are the same.

Furthermore, the octagonal shape of each handle enables a comfortable grip that adapts to all types of hands. In fact, the handles of all Wusaki knives are a bit longer than average to make the knives easier to manipulate regardless of whether you are a professional or a hobby cook.

Maintenance tips

To keep your knives in optimal conditions for a long time, we recommend you to wash them always by hand with lukewarm water and mild soap. Try to prevent to wet the handle as much as possible, because wood does not tolerate humidity very well. Finally, dry your knives with a soft cloth, and store them in a safe place free of humidity. 

If when you receive your set you notice that the blades are a bit "oily", do not worry. This is absolutely normal the oil protects the steel of the blades. You simply need to rinse it off before using the knives for the first time.
