It is in the Saurat valley at the foot of the Pyrenees mountain range where you can find the last artisanal enterprise that manufactures French sharpening stones. The expertise and traditional know-how of the artisans of the region has led them to be awarded the Living Heritage Company Label which is given by the French government.
The stones are extracted from the mountain over a period of 2 to 3 months each year, and they are then entirely hand-crafted by the artisans. First, they are cut to the desired size and washed several times with high water pressure to remove the stone residues as much as possible.
Next, they are placed for 1 hour in a tool called "the rocker" which makes a continuous movement from left to right thanks to an electric mechanism. The rocker is filled with pebbles, sand and water, which will have an abrasive effect on the stones, giving them an optimum grain.
This process also applies for the natural sharpening stone shown in this page. This stone enables a smooth and precise sharpening for all your knives with steel blades. Moreover, the fineness and abrasiveness of this stone, as well as its size, will make of it the perfect stone to sharpen Laguiole knives (that explains why is named “Special laguiole”).
For its proper usage, the stone must be wetted before each use in order to obtain a finer sharpening and not damage the stone. Other than that, the stone does not really require any type of special maintenance, but from time to time, if necessary, you can clean the stone with dish soap while brushing its surface under warm water.
