With the chef knife 20cm, you'll be able to dice, mince, or slice a large variety of foods such as fruits, vegetables, meats, herbs, and more. It is the most essential knife for your kitchen, thus it will be of great use in your daily cooking routine. It belongs to the Wusaki Damas VG10 series, which is a range of knives characterised for their incredibly beautiful design and their remarkable quality.
The blade of this chef knife has a core made of Japanese VG10 steel, which is a type of steel highly appreciated by chefs around the world due to its hardness, which enables the blade to remain sharp for long time. Indeed, with 1% of carbon content, this steel reaches a hardness level of 60 HRC in the Rockwell scale.
Around the core, there are 67 layers of damask steel that create original wavy lines on the blade's surface, which gives a beautiful look to the knife. Moreover, the upper part of the blade's surface is also hammered, which not only contributes to the aesthetics of the blade but it also reduces its stickiness when cutting foods.
The blade's edge has a V-shape that allows it to easily and precisely cut through your foods. Its final sharpening was made manually at an angle of 30° using a leather grinding band. In addition, the surface was polished to give a mirror-effect, which improves the blade's resistance to corrosion.
Another important feature of this knife is its beautiful handle. It is made of olive wood, which contrasts perfectly with the steel of the blade thus providing an overall dazzling look to the knife. The wood has been treated so that its surface becomes smooth and soft to touch.
The shape and design of the handle were carefully studied to provide you with a comfortable grip at all times during the preparation of your meals. To add even more comfort, the handle is also longer than average, thus the knife will easily adapt to even the biggest hands of chefs and home cooks.
For the proper care and maintenance of both the blade and the handle, we recommend you to always wash the knife by hand with lukewarm water and a mild soap. Then, dry it immediately with a soft cloth and store it away in a safe place (for example: in a knife block or in a roll bag).
When washing the knifes, try to avoid as much as possible to wet the handle, because the wood doesn’t like humidity. In fact, to protect and preserve the wood of the handle, we recommend you to wipe it from time to time with a cloth slightly soaked in olive oil.
Last but not least, this pack also comes with a Wusaki sharpening stone, which you can use to sharpen this chef knife or any other knives that you might already have in your kitchen. This whetstone has a double-side design, which means that it has two different faces with different grit.
- Grit #3000: fine grains that are ideal to finish the sharpening of blades with hardeness 58/60HRC or to do the initial honing of blades with +60 HRC (like the chef knife in this pack) to obtain a razor sharp edge.
- Grit #8000: ultra fine grains perfect to finish the blade's edge and guarantee clean, fast, and easy cuts on your foods. This side is to be used after having used the grit 3000.
The whetstone comes with a black, non-slip base made of silicone in which you can put the stone to ensure stability whilst you sharpen your knives. For an optimal usage of this sharpening stone, we recommend you to soak it in water 15 minutes before usage, and during usage, do not hesitate to add some drops of water when the surface starts to dry.
