The blades
They are made of X50CrMoV15 stainless steel coming from Germany, and they stand out for their durability and because they are easy to sharpen and clean. Thanks to its 15% of chromium content, the steel has great resistance to corrosion. The 0.5% of carbon content is what provides the hardness, and the molybdenum and vanadium help for the resistance to strokes and for the elasticity.
With a hardness level of 56/58 HRC in the Rockwell scale, the knives can remain sharp for a good amount of time. However, it is still important to hone their blades before they become dull. This can be done by using one of the Wusaki whetstones available here on our website.
For a truly original look, each blade has been hammered with a mechanical press that creates patterns that are unique on each single blade. Beyond the aesthetics, the hammered surface also serves to reduce the stickiness of the blade's surface, which allows your to make cleaner cuts.
The blades have a V-shaped edges that are sharpened by hand with the use of a grinding leather band at a lateral angle of 15° (thus an accumulated angle of 30°). This explains why these knives can penetrate foods so easily and effortlessly. Cutting food has never felt so good!
The handles
These Wusaki knives have top quality handles made of pakkawood. This material is highly popular in the culinary world thanks to its durability and robustness. Made of resin and laminated wood being compressed together by heat, pakkawood has veinings on its surface that create a remarkable resemblance with wood. Pakkawood is also known for its anti-bacterial properties and its resistance to the changes in temperature. Its surface has been varnished to add an extra layer of protection against humidity and stains.
Thanks to their simple, ergonomic design, the handles provide a comfortable grip for both left and right-handed cooks. The reddish, warm tones on the handle create the perfect contrast with the hammered steel of the blade. At the base (bottom) of the handle, there is an engraving of the Japanese character "Tiger."
