The blade is made of X50CrMoV15 stainless steel from Germany. This professional steel stands out for its durability and because it is easy to sharpen it and also to clean it. Its 15% of chromium content is what makes the steel so resistant to corrosion. The 0.5% of carbon content is what provides the hardness, and the molybdenum and vanadium help for the resistance to strokes and for the elasticity.
Thanks to its hardness level of 56/58 HRC in the Rockwell scale, the blade can remain sharp for a good amount of time. To preserve its sharp edge, however, it is important that you take care of it by sharpening the blade in a regular basis before it becomes dull. What makes the blade so unique and original is definitely its hammered surface. In fact,it was hammered with a mechanical press that creates patterns that are unique on each single knife. This surely gives an original look to the knife, but the hammered surface also serves to reduce the blade's stickiness, which allows you to make cleaner cuts.
To ensure precise cuts, the blade has been designed with a V-shaped edge that was sharpened by hand with the use of a grinding leather band at a lateral angle of 15° (thus an accumulated angle of 30°). This Wusaki knife also has a top quality handle that is made of pakkawood, which is a composite material highly appreciated in the culinary world thanks to its durability and robustness. It is made of resin and laminated wood that are compressed together by heat. Pakkawood has veinings on its surface that create a remarkable resemblance with wood. This material is also known for its anti-bacterial properties and its resistance to the changes in temperature. It has been also varnished to add an extra layer of protection against humidity and stains.
To suit both left and right-handed cooks, the handle has been designed with a simple and ergonomic shape.
